Artic Char With Spinach And Crab Meat With A Quinoa Salad at Bonefish Grill
Bonefish Grill Copycat Recipe
1 cup red quinoa
1 cup edamame, steamed
1/4 red bell pepper
1/4 green bell pepper
1/4 teaspoon salt
1/3 zucchini chopped
1 tablespoon olive oil
1 tablespoon (can add a little more) lemon juice
pinch pepper or fresh pepper
fresh thyme and basil for added flavor, optional
Boil 1 1/4 cup water. Add 1 cup of rinsed red quinoa (rinse using a fine mesh strainer, do not skip this!) to boiling water. Cover and cook for 15 minutes.
In a large bowl, combine quinoa and the rest of the ingredients. Stir well and refrigerate.
