Beet and Goat Cheese Salad
BEET and GOAT CHEESE SALAD
Bonefish Grill Copycat Recipe
4 medium beets, scrubbed, trimmed and cut in half
1/3 cup chopped walnuts
3 tablespoons maple syrup
1 (10 oz.) package mixed baby salad greens
2 ounces goat cheese
Place beets into a saucepan, and fill with enough water to cover. Bring to a boil, then cook for 20 to 30 minutes, until tender. Drain and cool, then cut in to cubes. While the beets are cooking, place the walnuts in a skillet over medium-low heat. Heat until warm and starting to toast, then stir in the maple syrup. Cook and stir until evenly coated, then remove from the heat and set aside to cool.
2/3 cup extra virgin olive oil
1/4 cup sugar
3 tablespoons water
2 tablespoons white wine vinegar
1 t. minced garlic
1 tablespoon Dijon mustard
2 teaspoons lime juice
2 teaspoons orange juice
2 teaspoons minced fresh parsley
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon salt
fresh ground black pepper to taste
Place ingredients in a glass jar (mason style --or other glass container that has a lid) and cover. Shake jar vigorously for a minute.
Remove lid and heat mixture in microwave on high for about 30-45 seconds (so that sugar will dissolve).Remove from microwave and let cool a minute or two. Replace lid and shake until mixture is well-combined. Cover and chill for 1 hour before serving.
